Ingredients

  • 1–2 very ripe bananas (about 1 cup mashed)
  • 1/4 cup (60 ml) melted butter or neutral oil
  • 1/3 cup (65 g) sugar (white or brown)
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 3/4 cup (95 g) all-purpose flour

Optional add-ins: chocolate chips, chopped nuts, cinnamon (1/4 tsp)

Instructions

  1. Preheat oven to 175°C (350°F). Grease a mini loaf pan or line a muffin tin.
  2. Mash bananas in a bowl until smooth.
  3. Stir in melted butter (or oil).
  4. Mix in sugar, egg, and vanilla.
  5. Add baking powder, baking soda, and salt. Stir.
  6. Fold in flour just until combined (don’t overmix).
  7. Pour into pan (fill about 3/4 full).
  8. Bake:
    • Mini loaf: 25–35 minutes
    • Muffins: 15–20 minutes
      Until a toothpick comes out clean.
  9. Cool 10 minutes before removing from pan.

Quick Tips

  • For extra moisture, add 1 tbsp yogurt or sour cream.
  • For less sugar, reduce to 1/4 cup.
  • Freeze slices for up to 2 months.
