🥕 Moist Carrot Cake

Ingredients:

  • 2 cups flour
  • 1 ½ cups sugar
  • 1 cup oil
  • 4 eggs
  • 2 cups grated carrots
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional but 🔥)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla
  • ½ cup chopped walnuts or pecans (like in your pic)

Steps:

  1. Mix eggs, sugar, oil, and vanilla until smooth.
  2. Add dry ingredients and spices.
  3. Fold in carrots + nuts.
  4. Bake at 180°C (350°F) for 30–35 minutes.
  5. Let cool completely before frosting.

  • 200g cream cheese
  • ½ cup butter
  • 2–3 cups powdered sugar
  • 1 tsp vanilla

Beat until fluffy and smooth, then layer generously 🤍
