🍌 Mini Banana Bread (Makes 1 small loaf or 6–8 muffins)
Ingredients
- 1–2 very ripe bananas (about 1 cup mashed)
- 1/4 cup (60 ml) melted butter or neutral oil
- 1/3 cup (65 g) sugar (white or brown)
- 1 egg
- 1/2 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp baking soda
- Pinch of salt
- 3/4 cup (95 g) all-purpose flour
Optional add-ins: chocolate chips, chopped nuts, cinnamon (1/4 tsp)
Instructions
- Preheat oven to 175°C (350°F). Grease a mini loaf pan or line a muffin tin.
- Mash bananas in a bowl until smooth.
- Stir in melted butter (or oil).
- Mix in sugar, egg, and vanilla.
- Add baking powder, baking soda, and salt. Stir.
- Fold in flour just until combined (don’t overmix).
- Pour into pan (fill about 3/4 full).
- Bake:
- Mini loaf: 25–35 minutes
- Muffins: 15–20 minutes
Until a toothpick comes out clean.
- Cool 10 minutes before removing from pan.
Quick Tips
- For extra moisture, add 1 tbsp yogurt or sour cream.
- For less sugar, reduce to 1/4 cup.
