Poor Man’s Stew
Don’t let the name fool you — this humble, budget-friendly stew tastes incredibly rich and satisfying. Made with simple pantry staples like ground beef, potatoes, carrots, and broth, this slow-cooked meal is hearty, comforting, and perfect for feeding the whole family. It’s the kind of recipe that fills your kitchen with warmth and makes everyone come back for seconds.
Ingredients
- 1 lb (450 g) ground beef
- 4 large potatoes, peeled and diced into bite-sized cubes
- 4 large carrots, sliced into rounds
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 can (15 oz / 400 g) diced tomatoes, with juices
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
Optional Add-Ins (for extra richness and flavor)
- 1 tablespoon tomato paste
- 1 bay leaf
- ½ teaspoon smoked paprika
- 1 cup frozen peas or corn (added near the end)
- Fresh parsley for garnish
Instructions
Step 1: Brown the Beef
In a large skillet over medium heat, add the ground beef. Cook it for about 6–8 minutes, breaking it apart with a spoon or spatula, until it is fully browned and no longer pink.
If you want deeper flavor, you can add the chopped onion during the last 2–3 minutes of cooking to soften it slightly.
Once cooked, carefully drain any excess fat from the skillet.
Step 2: Prepare the Slow Cooker
Transfer the browned beef to your slow cooker. Add the diced potatoes, sliced carrots, chopped onion (if not already cooked), and minced garlic.
Step 3: Add the Liquids and Seasoning
Pour in the beef broth and the entire can of diced tomatoes with their juices.
Add Worcestershire sauce, salt, black pepper, and dried thyme. If using tomato paste, bay leaf, or smoked paprika, add them now.
Stir everything gently to combine, making sure the vegetables are evenly coated and mostly submerged in the liquid.
Step 4: Slow Cook to Perfection
Cover the slow cooker with its lid.
- Cook on Low for 6–8 hours, or
- Cook on High for 3–4 hours
The stew is ready when the potatoes and carrots are fork-tender and the flavors have blended beautifully.
If adding frozen peas or corn, stir them in during the last 30 minutes of cooking.
Step 5: Final Adjustments
Before serving, remove the bay leaf if used. Taste the stew and adjust seasoning as needed. You may want a little extra salt, pepper, or Worcestershire sauce depending on your preference.
If the stew is thicker than you like, add a small splash of warm broth. If you prefer it thicker, let it cook uncovered for the last 20–30 minutes.
