For the Brownie base:
ā¢ 1/2 cup melted butter
ā¢ 1 cup of sugar
ā¢ 1 teaspoon vanilla extract
ā¢ 1/4 cup cocoa powder
ā¢ Pinch of salt
ā¢ 1 tablespoon red food coloring
ā¢ 1 teaspoon of vinegar
ā¢ 2 eggs
ā¢ 3/4 cup all-purpose flour
For the Cheesecake Layer:
ā¢ 2 packages (8 ounces each) cream cheese, softened
ā¢ 3/4 cup sugar
ā¢ 2 eggs
ā¢ 2 teaspoons vanilla extract
For the assembly:
ā¢ Oreo cookies, amount to taste (approximately 12-16), crushed
Instructions
- Preparation of the brownie base:
ā¢ Preheat the oven to 175Ā°C (350Ā°F). Lightly grease a 9×9-inch square pan.
ā¢ In a large bowl, mix the melted butter, 1 cup sugar, and 1 teaspoon vanilla. Add the cocoa, pinch of salt, food coloring and vinegar, mixing well after each addition.
ā¢ Add the eggs one by one, beating well after each addition.
ā¢ Add the flour and mix until well combined.
ā¢ Pour the batter into the prepared pan, spreading it evenly. - Preparation of the cheesecake layer:
ā¢ In a medium bowl, mix cream cheese, 3/4 cup sugar, 2 eggs and 2 teaspoons vanilla until smooth.
ā¢ Spread the cheesecake mixture over the brownie layer in the pan. - Add the Oreos:
ā¢ Sprinkle the crushed Oreo cookies over the cheesecake layer. - Baking:
ā¢ Bake in the preheated oven for 25-30 minutes, or until the cheesecake filling is set and lightly golden.
ā¢ Let cool completely in the mold on a rack. - Serve:
ā¢ Once cool, cut into squares and serve.
