Mediterranean Spinach and Feta Cheese Crisps

Ingredients

12 wonton wrappers or thin pastry squares
1 cup fresh spinach, finely chopped
1/2 cup feta cheese, crumbled
1/2 cup mozzarella cheese, shredded
1 tablespoon olive oil
1 garlic clove, minced
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
A pinch of salt (optional, since feta is already salty)
Cooking spray or extra olive oil for brushing

Instructions

Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
Heat the olive oil in a small pan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the chopped spinach and cook for 2–3 minutes until wilted. Remove from the heat and allow it to cool slightly.
In a mixing bowl, combine the spinach, feta cheese, mozzarella cheese, oregano, black pepper, and a pinch of salt if desired.
Arrange the wonton wrappers on the prepared baking tray, leaving a little space between each one.
Spoon a small amount of the spinach and cheese mixture onto each wrapper and spread it evenly, leaving a small border around the edges.
Lightly brush the edges with olive oil or spray them with cooking spray to help them become crispy and golden during baking.
Bake for 10–12 minutes, or until the cheese is melted and bubbly and the edges are crisp and golden brown.
Remove from the oven and let them cool for a few minutes before serving.

Serving Suggestions

These crispy bites are best served warm and can be enjoyed on their own or with a side of tzatziki sauce, garlic yogurt dip, or a fresh Mediterranean salad. They also make an excellent appetizer before a main meal and are a great way to impress guests with minimal effort.
