🍋 Lemon Basil Salmon Rolls
🐟 Ingredients:
- 1 lb (450g) fresh salmon fillet, skin removed
- Salt and black pepper, to taste
- Zest and juice of 1 lemon
- 2 tbsp olive oil
- 1 garlic clove, minced
- 1 tbsp Dijon mustard (optional)
- 1/4 cup fresh basil leaves, chopped
- 4–6 large lettuce leaves or rice paper sheets (for wrapping)
- Optional garnish: lemon wedges, extra basil, sesame seeds
🔪 Instructions:
- Prepare the Salmon:
- Preheat oven to 375°F (190°C).
- Season the salmon with salt, pepper, lemon zest, and a little olive oil.
- Bake for 12–15 minutes, or until fully cooked and flaky. Let it cool slightly.
- Make the Filling:
- In a bowl, flake the cooked salmon with a fork.
- Add the lemon juice, remaining olive oil, minced garlic, Dijon mustard (if using), and chopped basil. Mix well.
- Assemble the Rolls:
- If using lettuce leaves: place a generous spoonful of the salmon mixture in each leaf and roll it up like a burrito.
- If using rice paper: dip in warm water until soft, place on a flat surface, add salmon filling, and roll tightly like a spring roll.
- Serve:
- Arrange rolls on a platter.
- Garnish with lemon wedges, basil leaves, or sesame seeds if desired.
- Serve immediately or chill briefly for a refreshing appetizer or light meal.
🌿 Tips:
- For added crunch, include thinly sliced cucumber, carrots, or avocado inside the rolls.
- Swap basil with dill or cilantro for a different flavor twist.
- These can be made ahead and stored in the fridge for up to 24 hours.
