🧁 Raisin Bran Muffins

Ingredients

  • 2 cups raisin bran cereal (such as Kellogg’s Raisin Bran)
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 1 large egg
  • 1/4 cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin or grease lightly.
  2. Soak cereal: In a large bowl, combine raisin bran and milk. Let sit for 5–10 minutes to soften.
  3. Mix wet ingredients: Add egg, oil, and vanilla to the cereal mixture. Stir to combine.
  4. Combine dry ingredients: In another bowl, whisk flour, sugars, baking powder, baking soda, salt, and cinnamon.
  5. Mix together: Fold dry ingredients into wet mixture until just combined (do not overmix).
  6. Fill muffin cups about ¾ full.
  7. Bake 15–18 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 5 minutes, then transfer to a wire rack.

Optional Add-Ins

  • 1/4 cup chopped walnuts or pecans
  • 1 grated apple (reduce milk slightly)
  • Sprinkle of coarse sugar on top before baking
