Chocolate Strawberry Layer Cake

Chocolate Cake Layers

Ingredients

  • 1¾ cups (220 g) all-purpose flour
  • ¾ cup (75 g) unsweetened cocoa powder
  • 2 cups (400 g) sugar
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 eggs, room temp
  • 1 cup (240 ml) milk
  • ½ cup (120 ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240 ml) hot coffee or hot water

Instructions

  1. Preheat oven to 175°C / 350°F. Grease and line two 8-inch round pans.
  2. Whisk flour, cocoa, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth.
  4. Slowly stir in hot coffee/water (batter will be thin—perfect).
  5. Divide evenly and bake 30–35 min.
  6. Cool completely before assembling.

Strawberry Filling (Fresh & Bright 🍓)

  • 2 cups fresh strawberries, finely chopped
  • ⅓ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 1 tbsp water

Cook everything over medium heat until thick and jammy (5–7 min). Cool fully.


Chocolate Frosting

  • 1 cup (225 g) butter, softened
  • ½ cup (50 g) cocoa powder
  • 3½ cups powdered sugar
  • ¼ cup heavy cream (add more if needed)
  • 2 tsp vanilla
  • Pinch of salt

Beat until fluffy and spreadable.


Assemble

  1. Level cake layers.
  2. Frost first layer with a chocolate frosting dam around the edge.
  3. Fill center with strawberry filling.
  4. Top with second layer.
  5. Frost the entire cake and decorate as you like.
