Chocolate Cake Layers
Ingredients
- 1¾ cups (220 g) all-purpose flour
- ¾ cup (75 g) unsweetened cocoa powder
- 2 cups (400 g) sugar
- 1½ tsp baking powder
- 1½ tsp baking soda
- 1 tsp salt
- 2 eggs, room temp
- 1 cup (240 ml) milk
- ½ cup (120 ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240 ml) hot coffee or hot water
Instructions
- Preheat oven to 175°C / 350°F. Grease and line two 8-inch round pans.
- Whisk flour, cocoa, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Slowly stir in hot coffee/water (batter will be thin—perfect).
- Divide evenly and bake 30–35 min.
- Cool completely before assembling.
Strawberry Filling (Fresh & Bright 🍓)
- 2 cups fresh strawberries, finely chopped
- ⅓ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 1 tbsp water
Cook everything over medium heat until thick and jammy (5–7 min). Cool fully.
Chocolate Frosting
- 1 cup (225 g) butter, softened
- ½ cup (50 g) cocoa powder
- 3½ cups powdered sugar
- ¼ cup heavy cream (add more if needed)
- 2 tsp vanilla
- Pinch of salt
Beat until fluffy and spreadable.
Assemble
- Level cake layers.
- Frost first layer with a chocolate frosting dam around the edge.
- Fill center with strawberry filling.
- Top with second layer.
- Frost the entire cake and decorate as you like.
