🐟 Ingredients:

  • 1 lb (450g) fresh salmon fillet, skin removed
  • Salt and black pepper, to taste
  • Zest and juice of 1 lemon
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp Dijon mustard (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 4–6 large lettuce leaves or rice paper sheets (for wrapping)
  • Optional garnish: lemon wedges, extra basil, sesame seeds

🔪 Instructions:

  1. Prepare the Salmon:
    • Preheat oven to 375°F (190°C).
    • Season the salmon with salt, pepper, lemon zest, and a little olive oil.
    • Bake for 12–15 minutes, or until fully cooked and flaky. Let it cool slightly.
  2. Make the Filling:
    • In a bowl, flake the cooked salmon with a fork.
    • Add the lemon juice, remaining olive oil, minced garlic, Dijon mustard (if using), and chopped basil. Mix well.
  3. Assemble the Rolls:
    • If using lettuce leaves: place a generous spoonful of the salmon mixture in each leaf and roll it up like a burrito.
    • If using rice paper: dip in warm water until soft, place on a flat surface, add salmon filling, and roll tightly like a spring roll.
  4. Serve:
    • Arrange rolls on a platter.
    • Garnish with lemon wedges, basil leaves, or sesame seeds if desired.
    • Serve immediately or chill briefly for a refreshing appetizer or light meal.

🌿 Tips:

  • For added crunch, include thinly sliced cucumber, carrots, or avocado inside the rolls.
  • Swap basil with dill or cilantro for a different flavor twist.
  • These can be made ahead and stored in the fridge for up to 24 hours.
