๐๐ง Smothered Chicken and Rice
Tender, juicy chicken breasts smothered in a rich, creamy cheddar sauce and served over fluffy rice. This easy one-pan comfort meal is perfect for busy weeknights or family dinners.

For the Chicken
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and black pepper, to taste
For the Rice
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tbsp butter
For the Creamy Cheese Sauce
- 2 tbsp butter
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 1/2 cups shredded sharp cheddar cheese ๐ง
- 1/4 cup grated Parmesan cheese
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and black pepper, to taste
Garnish
- 2 tbsp chopped fresh parsley ๐ฟ
๐จโ๐ณ Instructions
1. Cook the Rice
- In a saucepan, bring the chicken broth and butter to a boil.
- Stir in the rice, cover, and reduce the heat to low.
- Cook for 18โ20 minutes, or until the liquid is absorbed.
- Fluff with a fork and keep warm.
2. Cook the Chicken
- Season the chicken with garlic powder, onion powder, paprika, thyme, salt, and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Cook the chicken for 5โ7 minutes per side, or until golden brown and the internal temperature reaches 165ยฐF (74ยฐC).
- Remove from the skillet and keep warm.
3. Make the Creamy Sauce
- In the same skillet, melt the butter.
- Add the garlic and cook for 30 seconds.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the chicken broth until smooth.
- Stir in the heavy cream, onion powder, and paprika.
- Simmer for 2โ3 minutes until slightly thickened.
- Reduce the heat to low and stir in the cheddar and Parmesan cheeses until melted and smooth.
- Season with salt and pepper to taste.
4. Smother the Chicken
- Return the chicken to the skillet.
- Spoon the creamy cheese sauce over each piece.
- Simmer for 2โ3 minutes to heat through.
5. Serve
- Spoon the fluffy rice onto serving plates.
- Top with the smothered chicken.
- Drizzle generously with the creamy cheese sauce.
- Garnish with chopped parsley.
