For the Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp dried thyme

For the Rice

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tbsp butter

For the Creamy Cheese Sauce

  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded sharp cheddar cheese ๐Ÿง€
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste

1. Cook the Rice

  • In a saucepan, bring the chicken broth and butter to a boil.
  • Stir in the rice, cover, and reduce the heat to low.

  • Fluff with a fork and keep warm.

2. Cook the Chicken

  • Season the chicken with garlic powder, onion powder, paprika, thyme, salt, and pepper.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Cook the chicken for 5โ€“7 minutes per side, or until golden brown and the internal temperature reaches 165ยฐF (74ยฐC).
  • Remove from the skillet and keep warm.

3. Make the Creamy Sauce

  • In the same skillet, melt the butter.
  • Add the garlic and cook for 30 seconds.
  • Whisk in the flour and cook for 1 minute.
  • Gradually whisk in the chicken broth until smooth.
  • Stir in the heavy cream, onion powder, and paprika.
  • Simmer for 2โ€“3 minutes until slightly thickened.
  • Reduce the heat to low and stir in the cheddar and Parmesan cheeses until melted and smooth.
  • Season with salt and pepper to taste.

4. Smother the Chicken

  • Return the chicken to the skillet.
  • Spoon the creamy cheese sauce over each piece.
  • Simmer for 2โ€“3 minutes to heat through.

5. Serve

  • Spoon the fluffy rice onto serving plates.
  • Top with the smothered chicken.
  • Drizzle generously with the creamy cheese sauce.
  • Garnish with chopped parsley.
