For the Chicken & Potatoes
- 1 ½ lbs (680 g) boneless, skinless chicken breasts
- 1 ½ lbs (680 g) baby potatoes, halved
- 1 small yellow onion, sliced
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
For the Creamy Cheese Sauce
- ¾ cup heavy cream
- ½ cup low-sodium chicken broth
- ½ cup sour cream
- ½ cup freshly grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon black pepper
For Garnishing
- 2 tablespoons fresh parsley, chopped
- Extra Parmesan, optional
- Freshly ground black pepper

1. Prepare the oven
Preheat your oven to 400°F (200°C).
Lightly grease a large baking dish with a little olive oil or cooking spray.
2. Prepare the potatoes
Place the halved baby potatoes in a large bowl. Add half of the olive oil, paprika, Italian seasoning, garlic powder, onion powder, salt, black pepper, and thyme.
Toss thoroughly until the potatoes are evenly coated.
Spread them in the prepared baking dish and bake for approximately 20 minutes. This gives the potatoes a head start so they become tender at the same time as the chicken.
3. Season the chicken
While the potatoes are baking, cut the chicken breasts into medium-sized bite-size pieces.
Place the chicken in the same bowl and add the remaining olive oil, along with a little salt, pepper, paprika, and Italian seasoning. Toss until well coated.
4. Make the creamy sauce
In a separate bowl, whisk together the heavy cream, chicken broth, sour cream, Parmesan cheese, Italian seasoning, and black pepper.
Mix until smooth and creamy.
5. Assemble the casserole
Remove the partially baked potatoes from the oven.
Add the seasoned chicken, sliced onion, and minced garlic. Toss everything gently so the ingredients are evenly distributed.
Pour the creamy sauce over the chicken and potatoes.
Sprinkle the shredded mozzarella evenly over the top.
6. Bake until golden
Return the baking dish to the oven and bake uncovered for approximately 25–30 minutes, or until the chicken is fully cooked, the potatoes are tender, and the cheese is melted and golden.
If you want a deeper golden crust, switch the oven to broil for the final 1–2 minutes, watching carefully so the cheese doesn’t burn.
7. Let it rest
Remove the casserole from the oven and allow it to rest for 5–10 minutes before serving.
This gives the creamy sauce a chance to thicken slightly and allows the juices to settle.
8. Garnish and serve
Sprinkle fresh parsley and a little extra Parmesan over the top.
