📝 Ingredients:

  • 4 cups green tomatoes (chopped) 🍅
  • 2 cups cabbage (chopped)
  • 1 cup onion (chopped)
  • 1/2 cup green bell pepper (chopped)
  • 1/2 cup red bell pepper (chopped)
  • 2 tbsp salt

For the Pickling Liquid:

  • 2 cups apple cider vinegar
  • 1 1/2 cups sugar
  • 1 tbsp mustard seeds
  • 1 tsp celery seeds
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • Optional: 1/2 tsp chili flakes 🌶️

👨‍🍳 Instructions:

1. Salt & Rest

  • Mix all chopped vegetables with salt.
  • Cover and let sit overnight (or at least 6–8 hours).
  • This draws out excess moisture.

2. Rinse & Drain

  • Rinse vegetables well to remove excess salt.
  • Drain thoroughly.

3. Make Pickling Brine

  • In a large pot, combine vinegar, sugar, and spices.
  • Bring to a boil.

4. Cook the Chow Chow

  • Add vegetables to the boiling brine.
  • Simmer for 10–15 minutes until slightly tender.

5. Jar It

  • Spoon hot mixture into sterilized jars.
  • Seal tightly.

6. Cool & Store

  • Let cool completely.
  • Refrigerate or process for long-term storage.
