- 2 tbsp salt
For the Pickling Liquid:
- 2 cups apple cider vinegar
- 1 1/2 cups sugar
- 1 tbsp mustard seeds
- 1 tsp celery seeds
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- Optional: 1/2 tsp chili flakes πΆοΈ

1. Salt & Rest
- Mix all chopped vegetables with salt.
- Cover and let sit overnight (or at least 6β8 hours).
- This draws out excess moisture.
2. Rinse & Drain
- Rinse vegetables well to remove excess salt.
- Drain thoroughly.
3. Make Pickling Brine
- In a large pot, combine vinegar, sugar, and spices.
- Bring to a boil.
4. Cook the Chow Chow
- Add vegetables to the boiling brine.
- Simmer for 10β15 minutes until slightly tender.
5. Jar It
- Spoon hot mixture into sterilized jars.
- Seal tightly.
6. Cool & Store
- Let cool completely.
- Refrigerate or process for long-term storage.
