💜 The Dreamiest Blackberry Velvet Cake

- 1 cup neutral oil (canola or vegetable)
- 1 cup buttermilk, room temp
- 2 large eggs, room temp
- 1 cup cooled blackberry purée
- 1 tsp vanilla extract
- 1 tsp white vinegar
Cream Cheese Frosting
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3½–4 cups powdered sugar
- 1–2 tbsp blackberry purée (optional swirl)
- 1 tsp vanilla
Instructions
1. Make the blackberry purée
- Simmer blackberries, sugar, and lemon juice over medium heat 8–10 minutes until juicy.
- Blend smooth, then strain seeds.
- Cool completely.
2. Bake the cake
- Preheat oven to 350°F (175°C).
Grease and line two 9-inch round pans. - In a bowl, whisk cake flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, whisk oil, buttermilk, eggs, blackberry purée, vanilla, and vinegar.
- Combine wet and dry just until smooth.
- Divide batter evenly between pans.
- Bake 25–30 minutes, until a toothpick comes out clean.
- Cool completely before frosting.
3. Make the frosting
- Beat cream cheese and butter until fluffy.
- Gradually add powdered sugar.
- Beat in vanilla.
- Optional: gently swirl in blackberry purée for a marbled look.

- Frost generously between layers and on the outside.
- Garnish with fresh blackberries or edible flowers.
