Serves 2–4

🥔 Loaded Baked Potatoes (Start First)

Ingredients

  • 2–4 large russet potatoes
  • Olive oil
  • Salt
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked & crumbled
  • 1/2 cup sour cream
  • 2 tbsp butter
  • 2 tbsp chopped chives or green onions

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Scrub potatoes, dry, rub with olive oil and salt.
  3. Pierce with fork and bake 50–60 minutes until tender.
  4. Slice open, fluff inside with fork.
  5. Add butter, cheese, bacon, sour cream, and chives.

🥩 Steak (Turf)

Ingredients

  • 2 ribeye or filet mignon steaks (1–1½ inches thick)
  • Salt & black pepper
  • 1 tbsp oil
  • 2 tbsp butter
  • 2 cloves garlic, smashed
  • Fresh thyme or rosemary (optional)

Instructions

  1. Let steak sit at room temp 30 minutes.
  2. Pat dry and season generously with salt & pepper.
  3. Heat skillet (cast iron preferred) until very hot.
  4. Add oil, then steak. Sear:
    • 3–4 min per side (medium-rare)
  5. Add butter, garlic, herbs. Spoon melted butter over steak for 1–2 minutes.
  6. Rest 5–10 minutes before serving.

🦐 Garlic Butter Shrimp (Surf)

Ingredients

  • 250–400 g shrimp, peeled & deveined
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Salt & pepper
  • 1 tbsp lemon juice
  • Chopped parsley

Instructions

  1. Melt butter in pan over medium-high heat.
  2. Add garlic, cook 30 seconds.
  3. Add shrimp, season with salt & pepper.
  4. Cook 1–2 minutes per side until pink.
  5. Finish with lemon juice & parsley.
