Strawberry Muffins with Strawberry Glaze

Berrylicious Strawberry Glazed Muffins

Ingredients:

Muffins:

2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1 cup chopped fresh strawberries

Strawberry Glaze:

1 cup powdered sugar
2 tablespoons strawberry puree
1/2 teaspoon vanilla extract

Directions:

Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.

In a large bowl, whisk together flour, sugar, baking powder, and salt.

In another bowl, beat the egg, milk, melted butter, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Fold in the chopped strawberries.

Spoon the batter into the muffin tin, filling each cup about 3/4 full.

Bake for 20-25 minutes, or until a toothpick inserted into a muffin comes out clean.

For the glaze, whisk together powdered sugar, strawberry puree, and vanilla extract until smooth.

Once the muffins are cool, drizzle them with the strawberry glaze.
