π Orange Marmalade Almond Cake
Ingredients
Dry
- 1 cup almond flour
- ΒΎ cup all-purpose flour
- 1Β½ tsp baking powder
- ΒΌ tsp salt
Wet
- Β½ cup unsalted butter, softened
- ΒΎ cup sugar
- 3 large eggs, room temp
- Β½ cup orange marmalade
- Zest of 1 orange
- 1 tsp vanilla extract
Optional Finish
- Powdered sugar
- Toasted sliced almonds
- Orange glaze (recipe below)
Instructions
- Prep
- Preheat oven to 350Β°F (175Β°C).
- Grease and line an 8-inch round cake pan.
- Mix dry ingredients
- Whisk almond flour, all-purpose flour, baking powder, and salt.
- Cream butter & sugar
- Beat butter and sugar until light and fluffy (2β3 minutes).
- Add eggs
- Add eggs one at a time, mixing well after each.
- Flavor it
- Mix in marmalade, orange zest, and vanilla.
- Combine
- Gently fold in dry ingredients until just combined.
- Bake
- Pour batter into pan, smooth top.
- Sprinkle sliced almonds on top if using.
- Bake 40β45 minutes, until a toothpick comes out clean.
- Cool
- Let cool 10 minutes in pan, then transfer to rack.
π Optional Orange Glaze
Mix:
- Β½ cup powdered sugar
- 1β2 tbsp fresh orange juice
Drizzle over cooled cake.
