🍌 Ginger Banana Bread
Warm, cozy, and slightly spicy — this ginger banana bread is perfect with tea or coffee, especially on chilly days.
📝 Ingredients (1 loaf)
- 3 ripe bananas, mashed
- ½ cup (115g) unsalted butter, melted (or neutral oil)
- ½ cup (100g) brown sugar
- ¼ cup (50g) white sugar
- 2 eggs
- 1 tsp vanilla extract
- 1½ cups (190g) all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1½ tsp ground ginger
- ½ tsp cinnamon
- ¼ tsp ground cloves (optional)
- 1 tbsp freshly grated ginger (for extra zing)
Optional add-ins:
- ½ cup chopped walnuts or pecans
- ½ cup chocolate chips
- 2 tbsp crystallized ginger, chopped
👩🍳 Instructions
- Preheat oven to 175°C (350°F).
Grease and line a 9×5-inch loaf pan. - Mix wet ingredients
In a large bowl, combine mashed bananas, melted butter, brown sugar, and white sugar.
Add eggs and vanilla. Mix until smooth. - Mix dry ingredients
In a separate bowl, whisk flour, baking soda, salt, ginger, cinnamon, and cloves. - Combine
Gently fold dry ingredients into the wet mixture. Do not overmix.
Fold in any optional add-ins. - Bake
Pour batter into loaf pan.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. - Cool
Let cool in pan for 10–15 minutes, then transfer to a wire rack.
