📝 Ingredients (Serves 4)

  • 115g (½ cup) unsalted butter
  • 170g (6 oz) dark chocolate (60–70% cocoa), chopped
  • 2 whole eggs
  • 2 egg yolks
  • ¼ cup (50g) granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • Butter & cocoa powder (for greasing ramekins)

👩‍🍳 Instructions

  1. Preheat oven to 220°C (425°F).
    Grease 4 ramekins with butter and dust lightly with cocoa powder.
  2. Melt chocolate & butter
    In a heatproof bowl, melt together over a double boiler or in the microwave (30-second intervals). Stir until smooth. Let cool slightly.
  3. Whisk eggs & sugar
    In a separate bowl, whisk whole eggs, egg yolks, and sugar until light and slightly thickened.
  4. Combine
    Gently fold the melted chocolate mixture into the egg mixture.
    Add vanilla, salt, and flour. Mix until just combined (don’t overmix).
  5. Fill ramekins
    Divide batter evenly among ramekins (about ¾ full).
  6. Bake for 10–12 minutes
    The edges should be firm, but the center should still jiggle slightly.
  7. Rest & Serve
    Let sit for 1 minute. Carefully invert onto plates.
    Serve immediately for that signature lava flow.
