📝 Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter, softened 🧈
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup strongly brewed chai tea, cooled ☕
  • 1/2 cup sour cream or plain yogurt

For the Chai Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp brewed chai tea or milk
  • 1/4 tsp cinnamon
  • Pinch of cardamom

👨‍🍳 Instructions

1. Prep

  • Preheat oven to 175°C (350°F).
  • Grease and line a loaf pan or 8-inch (20 cm) round pan.

2. Mix Dry Ingredients

  • Whisk together flour, baking powder, baking soda, salt, and all the spices.

3. Cream Butter and Sugar

  • Beat butter, brown sugar, and granulated sugar until light and fluffy.
  • Add eggs one at a time, then mix in vanilla.

4. Combine

  • Stir together the chai tea and sour cream.
  • Add the dry ingredients to the butter mixture in three additions, alternating with the chai mixture.
  • Mix just until combined.

5. Bake

  • Pour batter into the prepared pan.
  • Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.

6. Make the Glaze

  • Whisk powdered sugar with chai tea, cinnamon, and cardamom until smooth.

7. Finish

  • Cool the cake completely.
  • Drizzle the glaze over the top.
