For the Cake
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground cardamom
- 1 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/2 cup unsalted butter, softened 🧈
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 3/4 cup strongly brewed chai tea, cooled ☕
- 1/2 cup sour cream or plain yogurt
For the Chai Glaze
- 1 cup powdered sugar
- 2–3 tbsp brewed chai tea or milk
- 1/4 tsp cinnamon
- Pinch of cardamom
👨🍳 Instructions
1. Prep
- Preheat oven to 175°C (350°F).
- Grease and line a loaf pan or 8-inch (20 cm) round pan.
2. Mix Dry Ingredients
- Whisk together flour, baking powder, baking soda, salt, and all the spices.
3. Cream Butter and Sugar
- Beat butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla.
4. Combine
- Stir together the chai tea and sour cream.
- Add the dry ingredients to the butter mixture in three additions, alternating with the chai mixture.
- Mix just until combined.
5. Bake
- Pour batter into the prepared pan.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
6. Make the Glaze
- Whisk powdered sugar with chai tea, cinnamon, and cardamom until smooth.
7. Finish
- Cool the cake completely.
- Drizzle the glaze over the top.
