Shrimp Fried Rice is a quick, flavorful dish that combines tender shrimp, fluffy rice, eggs, and colorful vegetables all stir-fried together in a savory sauce. It’s a perfect way to use leftover rice and can be ready in less than 30 minutes. The mix of garlic, soy sauce, and sesame oil gives it that delicious restaurant-style taste.

🛒 Ingredients

  • 3 cups cooked rice (preferably day-old rice)
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • 3 cloves garlic, minced
  • ½ cup diced carrots
  • ½ cup peas
  • ½ cup corn (optional)
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and black pepper to taste

👩‍🍳 Instructions

1️⃣ Prepare the Ingredients

Make sure your rice is cold and separated, not freshly cooked. Day-old rice works best because it fries better and doesn’t become mushy.

Pat the shrimp dry with a paper towel and season lightly with salt and pepper.

2️⃣ Cook the Shrimp

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

Add the shrimp and cook for 2–3 minutes until they turn pink and opaque. Remove them from the pan and set aside.

3️⃣ Cook the Eggs

In the same pan, add a little oil if needed.

Pour in the beaten eggs and scramble them gently until cooked. Remove and set aside with the shrimp.

4️⃣ Sauté the Vegetables

Add the remaining oil to the pan.

Cook the garlic, carrots, peas, and corn for about 2–3 minutes until the vegetables become tender and fragrant.

5️⃣ Fry the Rice

Add the cooked rice to the pan. Use a spatula to break up any clumps and stir-fry for about 3–4 minutes.

6️⃣ Add the Sauce

Pour the soy sauce and sesame oil over the rice and mix well so every grain is coated with flavor.

7️⃣ Combine Everything

Return the shrimp and scrambled eggs to the pan.

Add chopped green onions and toss everything together for another 1–2 minutes.

Taste and adjust seasoning with salt or extra soy sauce if needed.
