🥩 Garlic Butter Steak Bites
Ingredients
- 1½ lb sirloin or ribeye, cut into bite-size cubes
- Salt & black pepper
- 1 tbsp olive oil
- 3–4 tbsp butter
- 4 cloves garlic, minced

Instructions
- Pat steak bites very dry and season generously with salt & pepper.
- Heat a cast-iron or heavy skillet over high heat. Add olive oil.
- Sear steak in a single layer (work in batches if needed). Don’t move them for ~2 minutes.
- Flip and cook another 1–2 minutes until browned but still juicy.
- Lower heat to medium. Add butter, garlic, and herbs.
- Spoon the garlic butter over the steak for 30–45 seconds. Remove from heat immediately.

Ingredients
- 2 lb Yukon Gold potatoes, peeled & chunked
- Salt
- ½ cup heavy cream (or milk)
- 4 tbsp butter
- 1–1¼ cups freshly grated Asiago
- Black pepper
- Optional: roasted garlic or a splash of sour cream
Instructions
- Boil potatoes in well-salted water until fork-tender. Drain.
- Warm cream and butter together (microwave or saucepan).
- Mash potatoes, slowly adding cream/butter until smooth.
- Fold in Asiago until melted and creamy.
- Season with salt & black pepper.

🥦 Broccolini
Ingredients
- 1 bunch broccolini
- 1 tbsp olive oil or butter
- 1–2 cloves garlic, sliced
- Salt & pepper
- Optional finish: lemon zest or juice
Instructions
- Heat pan over medium-high. Add oil/butter.
- Toss in broccolini and sauté 3–4 minutes until bright green.
- Add garlic for the last 30 seconds.
- Season and finish with lemon if you like a little pop.
