Ingredients:

  • 1 cup (150g) pitted dates, chopped
  • 1 tsp baking soda
  • 1 cup (240ml) boiling water
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 3/4 cup (90g) chopped walnuts

Instructions:

  1. Prepare the dates:
    • Place chopped dates in a bowl.
    • Sprinkle with baking soda and pour over the boiling water.
    • Let sit for 10–15 minutes to soften.
  2. Preheat your oven:
    • Set to 325°F (160°C).
    • Grease and line a 9×5-inch (or 8×4-inch) loaf pan.
  3. Make the batter:
    • In a mixing bowl, cream the butter and brown sugar until light and fluffy.
    • Beat in the eggs one at a time.
    • Stir in the softened date mixture (including the water) and vanilla.
    • In a separate bowl, mix flour, baking powder, and salt.
    • Gradually fold dry ingredients into the wet mixture.
    • Stir in chopped walnuts.
  4. Bake:
    • Pour the batter into the prepared loaf tin.
    • Bake for 55–65 minutes, or until a skewer comes out clean.
    • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Tips:

  • For added moisture, you can soak the dates in strong brewed tea instead of plain boiling water.
  • The loaf can be wrapped and stored for up to 4 days at room temperature or frozen for longer storage.
