π Date and Walnut Loaf
Ingredients:
- 1 cup (150g) pitted dates, chopped
- 1 tsp baking soda
- 1 cup (240ml) boiling water
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 3/4 cup (90g) chopped walnuts
Instructions:
- Prepare the dates:
- Place chopped dates in a bowl.
- Sprinkle with baking soda and pour over the boiling water.
- Let sit for 10β15 minutes to soften.
- Preheat your oven:
- Set to 325Β°F (160Β°C).
- Grease and line a 9×5-inch (or 8×4-inch) loaf pan.
- Make the batter:
- In a mixing bowl, cream the butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time.
- Stir in the softened date mixture (including the water) and vanilla.
- In a separate bowl, mix flour, baking powder, and salt.
- Gradually fold dry ingredients into the wet mixture.
- Stir in chopped walnuts.
- Bake:
- Pour the batter into the prepared loaf tin.
- Bake for 55β65 minutes, or until a skewer comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Tips:
- For added moisture, you can soak the dates in strong brewed tea instead of plain boiling water.
- The loaf can be wrapped and stored for up to 4 days at room temperature or frozen for longer storage.
