For the Chicken
- 2 large chicken breasts
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 teaspoon honey
- 1 teaspoon dried oregano

For the Orzo & Veggies
- 1 cup orzo pasta
- 1 zucchini (sliced)
- 1 cup cherry tomatoes (halved)
- ½ red onion (chunks)
- 1 bell pepper (sliced)
- 2 tablespoons olive oil
- Salt & pepper
For Lemon Whipped Feta
- 150g feta cheese
- 3 tablespoons Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
For Garnish
- Fresh parsley or basil
- Extra olive oil drizzle
👩🍳 Instructions
1️⃣ Marinate the Chicken
In a bowl, mix:
- Balsamic vinegar
- Olive oil
- Garlic
- Honey
- Oregano
- Salt & pepper
Coat the chicken and let it marinate for 20–30 minutes.
2️⃣ Cook the Orzo
Bring salted water to a boil and cook the orzo according to package instructions (about 8–10 minutes).
