🥩 Garlic Butter Steak Bites

Ingredients

  • 1½ lb sirloin or ribeye, cut into bite-size cubes
  • Salt & black pepper
  • 1 tbsp olive oil
  • 3–4 tbsp butter
  • 4 cloves garlic, minced
  • Fresh thyme or rosemary (optional but 🔥)

Instructions

  1. Pat steak bites very dry and season generously with salt & pepper.
  2. Heat a cast-iron or heavy skillet over high heat. Add olive oil.
  3. Sear steak in a single layer (work in batches if needed). Don’t move them for ~2 minutes.
  4. Flip and cook another 1–2 minutes until browned but still juicy.
  5. Lower heat to medium. Add butter, garlic, and herbs.
  6. Spoon the garlic butter over the steak for 30–45 seconds. Remove from heat immediately.
