π Ingredients
For Marination
- 300 g chicken thighs (boneless, cut into bite-size pieces)
- 1 tsp salt
- 1 tsp ginger-garlic paste
- 1 tsp red chilli sauce
- 1 egg white
- 2 tbsp cornflour
- 1 tsp all-purpose flour
For the Sauce
- 1 tbsp oil
- 4 cloves garlic (finely chopped)
- 1 inch ginger (finely chopped)
- 2 green chilies (sliced)
- 1 medium onion (cubed)
- 1 small green bell pepper (cubed)
- 2 tbsp soy sauce
- 1 tbsp chilli sauce
- 1 tbsp tomato ketchup
- Β½ tsp black pepper
- Β½ tsp sugar (optional for balance)
- Β½ cup chicken stock or water
Cornflour Slurry
- 1 tsp cornflour
- 2 tbsp water
Garnish
- 2 tbsp chopped spring onions

1οΈβ£ Marinate the Chicken
In a bowl, mix together:
- Chicken pieces
- Salt
- Ginger garlic paste
- Red chilli sauce
- Egg white
- Cornflour
- All-purpose flour
Mix well so the chicken is evenly coated. Let it marinate for about 15 minutes.
2οΈβ£ Fry the Chicken
Heat oil in a deep pan.
Fry the marinated chicken pieces on low to medium heat until they become light golden and crispy.
Remove and place on paper towels to drain excess oil.
3οΈβ£ Prepare the Sauce
In another pan or wok, heat 1 tablespoon oil.
Add:
- Garlic
- Ginger
- Green chilies
SautΓ© for about 30 seconds until fragrant.
Add the onions and bell peppers and stir-fry on high heat for 1β2 minutes so they stay slightly crunchy.

Add:

Add the cornflour slurry and stir continuously until the sauce becomes glossy and slightly thick.

Add the fried chicken pieces to the sauce.
Toss everything together until the chicken is fully coated with the flavorful chilli sauce.
Cook for another 2β3 minutes.
