- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- Mix the graham cracker crumbs, melted butter, and sugar until evenly combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Add the sugar, vanilla extract, and lemon juice, mixing until fully incorporated.
- Beat in the eggs one at a time, followed by the sour cream.
- Gently fold the whipped cream into the mixture until smooth.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 50–60 minutes, until the edges are set but the center still has a slight wobble.
- Turn off the oven, leave the door slightly open, and let the cheesecake cool inside for 1 hour.
- Refrigerate for at least 6 hours, preferably overnight.
- For the topping, combine sugar, water, cornstarch, and lemon juice in a saucepan. Cook over medium heat until thickened.
- Fold in the sliced strawberries and allow the mixture to cool completely.
- Spread the strawberry topping over the chilled cheesecake.
- Garnish with whole strawberries and mint leaves before serving.
